This is not the jiggly dessert you grew up with. This is very definitely a grown-up version that’s a great finish to the evening.
2 tablespoons unflavored gelatin
¾ cup boiling water
½ cup sugar (more or less to taste depending on sweetness of the wine)
1 ¾ cup fruit juice or wine
6 tablespoons lemon juice
1 cup port (substitute sherry or Madera if preferred)
Lightly sweetened whipped cream, if desired
Soak 2 tablespoons gelatin in ¼ cup cold water until softened (about 2 minutes). Pour boiling water over softened gelatin. Add sugar. Stir until gelatin and sugar are dissolved and well combined. Stir in lemon juice and port. Pour mixture into a gelatin mold and refrigerate until set (about 2 hours). Unmold and serve with a dollop of whipped cream.
