This is not the jiggly dessert you grew up with. This is very definitely a grown-up version that’s a great finish to the evening.<\/p>\n
2 tablespoons unflavored gelatin
\n\u00be cup boiling water
\n\u00bd cup sugar (more or less to taste depending on sweetness of the wine)
\n1 \u00be cup fruit juice or wine
\n6 tablespoons lemon juice
\n1 cup port (substitute sherry or Madera if preferred)
\nLightly sweetened whipped cream, if desired<\/p>\n
Soak 2 tablespoons gelatin in \u00bc cup cold water until softened (about 2 minutes). Pour boiling water over softened gelatin. Add sugar. Stir until gelatin and sugar are dissolved and well combined. Stir in lemon juice and port. Pour mixture into a gelatin mold and refrigerate until set (about 2 hours).\u00a0Unmold and serve with a dollop of whipped cream.<\/p>\n
